Rybbit is a web analytics platform that aims to be as easy to read as Plausible while offering more of the product analytics that Google Analytics users miss: funnels, retention, user journeys, and session replays. It is cookieless and runs on your own server.

Deployment
Rybbit stores events in ClickHouse and application data in PostgreSQL, and ships a Docker Compose setup for both along with the app. ClickHouse is what makes large-volume analytics fast, but it wants real memory: budget a couple of gigabytes of RAM at minimum. A hosted version is also available at rybbit.com.
A note on session replay
Session replay records what visitors do on your pages. It is powerful for finding usability problems, and it is also the most privacy-sensitive feature in any analytics tool. Mask form inputs and sensitive content, tell visitors in your privacy policy, and check what your local privacy law requires before turning it on.
